- Preheat oven to 425°F (220°C) and prepare a baking sheet.
- Wash, scrub, and cut potatoes into evenly sized wedges.
- Pat potatoes dry with paper towels to remove excess moisture.
- Place potatoes in a mixing bowl and toss with olive oil.
- Add onion soup mix, garlic powder, paprika, black pepper, and salt if needed.
- Toss until potatoes are evenly coated with seasoning.
- Spread potatoes in a single layer on a baking sheet.
- Bake 30–35 minutes, flipping halfway through, until golden and crispy.
- Remove from oven, garnish with parsley, and serve hot.
Notes
For extra crispiness, soak cut potatoes in cold water for 20 minutes, then dry thoroughly before seasoning.
