- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Peel and trim carrots. Slice thick carrots lengthwise for even cooking.
- Toss carrots with olive oil in a large mixing bowl.
- In another bowl, combine parmesan cheese, breadcrumbs, garlic powder, paprika, Italian seasoning, salt, and black pepper.
- Coat carrots thoroughly with the parmesan mixture.
- Arrange carrots in a single layer on the baking sheet.
- Roast for 25 to 30 minutes, flipping halfway through cooking.
- Remove from oven once carrots are tender and crispy around the edges.
- Garnish with parsley and serve immediately.
