Ingredients
  

Carrots
  • 2 pounds whole carrots peeled and trimmed
  • 3 tbsp olive oil
  • 1 cup parmesan cheese freshly grated
  • 0.5 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Peel and trim carrots. Slice thick carrots lengthwise for even cooking.
  3. Toss carrots with olive oil in a large mixing bowl.
  4. In another bowl, combine parmesan cheese, breadcrumbs, garlic powder, paprika, Italian seasoning, salt, and black pepper.
  5. Coat carrots thoroughly with the parmesan mixture.
  6. Arrange carrots in a single layer on the baking sheet.
  7. Roast for 25 to 30 minutes, flipping halfway through cooking.
  8. Remove from oven once carrots are tender and crispy around the edges.
  9. Garnish with parsley and serve immediately.

Notes

Use freshly grated parmesan for the crispiest texture and best flavor.
