Ingredients
  

  • 2 large potatoes peeled and boiled
  • 1 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese optional
  • 2 tbsp cornstarch or all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp paprika optional
  • 1/2 tsp black pepper
  • 1/2 tsp salt adjust to taste
  • 1 egg for binding
  • 1 cup breadcrumbs panko preferred
  • oil for frying
  • fresh parsley or chives for garnish

Method
 

  1. Peel and boil the potatoes until tender, then mash until smooth. Let cool slightly.
  2. Combine mashed potatoes, cheeses, cornstarch, and seasonings in a bowl. Mix into a dough.
  3. Shape mixture into stick-like cylinders.
  4. Dip each stick into beaten egg, then coat with breadcrumbs.
  5. Heat oil in a frying pan. Fry sticks until golden brown, 2–3 minutes per side.
  6. Drain on paper towels. Garnish with parsley and serve hot with dipping sauce.

Notes

For best results, chill shaped sticks for 20 minutes before frying to help them hold shape. Double coat in breadcrumbs for extra crunch.
