Ingredients
  

Salmon Cakes
  • 2 cups cooked salmon flaked
  • 1 cup breadcrumbs
  • 2 eggs
  • 0.25 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • 0.25 cup onion finely chopped
  • 2 tbsp parsley chopped
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 3 tbsp olive oil for frying

Method
 

  1. Flake salmon into a bowl and combine with breadcrumbs, eggs, mayonnaise, mustard, lemon juice, onion, parsley, and seasonings.
  2. Form mixture into patties and refrigerate for 15–20 minutes.
  3. Heat oil in skillet over medium heat.
  4. Cook patties 3–4 minutes per side until golden brown.
  5. Drain on paper towels and serve warm.

Notes

Chilling the patties helps them hold together during cooking. Panko breadcrumbs provide extra crispiness.
