- Flake salmon into a bowl and combine with breadcrumbs, eggs, mayonnaise, mustard, lemon juice, onion, parsley, and seasonings.
- Form mixture into patties and refrigerate for 15–20 minutes.
- Heat oil in skillet over medium heat.
- Cook patties 3–4 minutes per side until golden brown.
- Drain on paper towels and serve warm.
Notes
Chilling the patties helps them hold together during cooking. Panko breadcrumbs provide extra crispiness.
