Method
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Boil baby potatoes in salted water for 15–20 minutes until fork-tender. Drain and let steam dry.
- Place potatoes on baking sheet and gently smash each one to about 1/2 inch thick.
- Mix olive oil, garlic, salt, pepper, and smoked paprika. Brush over potatoes.
- Sprinkle with parmesan cheese if using.
- Bake 25–35 minutes until golden and crispy.
- Garnish with fresh parsley and serve hot.
Notes
For extra crispiness, broil 2–3 minutes at the end. Do not overcrowd the pan.
