Ingredients
  

Potatoes
  • 2 lbs baby potatoes
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika optional
  • 0.25 cup parmesan cheese grated
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Boil baby potatoes in salted water for 15–20 minutes until fork-tender. Drain and let steam dry.
  3. Place potatoes on baking sheet and gently smash each one to about 1/2 inch thick.
  4. Mix olive oil, garlic, salt, pepper, and smoked paprika. Brush over potatoes.
  5. Sprinkle with parmesan cheese if using.
  6. Bake 25–35 minutes until golden and crispy.
  7. Garnish with fresh parsley and serve hot.

Notes

For extra crispiness, broil 2–3 minutes at the end. Do not overcrowd the pan.
