Ingredients
  

Fritter Batter
  • 2 cups sweet corn
  • 1 red bell pepper finely diced
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.25 tsp garlic powder
  • 2 eggs
  • 0.5 cup milk
  • 2 tbsp fresh parsley chopped
  • 2 green onions sliced
  • 3 tbsp vegetable oil for frying

Method
 

  1. In a bowl, mix flour, baking powder, salt, pepper, paprika, and garlic powder.
  2. In another bowl, whisk eggs and milk together.
  3. Combine wet and dry ingredients to form a batter.
  4. Fold in corn, red pepper, herbs, and green onions.
  5. Heat oil in skillet over medium heat.
  6. Drop spoonfuls of batter and flatten slightly.
  7. Cook until golden brown on both sides.
  8. Drain on paper towels and serve warm.

Notes

For extra crispiness, avoid overcrowding the pan and maintain medium heat while frying.
