  • 1.5 lb boneless skinless chicken breasts
  • 1 cup long-grain white rice uncooked
  • 3 cups chicken broth
  • 1 can cream of chicken soup 10.5 oz
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tbsp butter
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 tsp dried thyme

Method
 

  1. Grease the slow cooker lightly with butter or non-stick spray.
  2. Place chicken breasts evenly in the bottom of the crock pot.
  3. Season chicken with salt, pepper, paprika, and thyme.
  4. Add diced onion and minced garlic over the chicken.
  5. Sprinkle uncooked rice evenly over the chicken mixture.
  6. Whisk chicken broth and cream of chicken soup until smooth, then pour into slow cooker.
  7. Add butter pieces on top, cover, and cook on LOW for 4–5 hours or HIGH for 2½–3 hours.
  8. Stir gently, shred chicken if desired, rest for 10 minutes, then serve.
