Ingredients
  

Crock Pot Chili
  • 2 lbs ground beef or ground turkey
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 15 oz red kidney beans drained and rinsed
  • 15 oz black beans drained and rinsed
  • 29 oz diced tomatoes with juices
  • 8 oz tomato sauce
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 0.5 tsp cayenne pepper optional
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 1 tbsp brown sugar optional, to balance acidity

Equipment

Method
 

  1. Brown ground beef in a skillet over medium heat until fully cooked. Drain excess fat.
  2. Add diced onion, garlic, and bell pepper to the skillet and cook 3–4 minutes.
  3. Transfer mixture to the slow cooker.
  4. Add beans, diced tomatoes, tomato sauce, tomato paste, beef broth, and seasonings.
  5. Stir to combine. Cover and cook on Low for 6–8 hours or High for 3–4 hours.
  6. Stir well, adjust seasoning, and serve hot with toppings of choice.

Notes

For a smoky flavor, add chipotle peppers or a dash of liquid smoke.
