Method
- Dice onion, carrots, and celery. Mince garlic.
- Sear chicken breasts in olive oil for 2–3 minutes per side. Transfer to crock pot.
- Add vegetables, garlic, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper to crock pot.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- Remove chicken and shred. Return to crock pot.
- Stir in heavy cream, parmesan, and butter. Cook 15–20 minutes until creamy.
- Serve with chopped basil, optional pasta or croutons.
Notes
Add zucchini or spinach for extra nutrition.
