Ingredients
  

Chicken & Vegetables
  • 2 chicken breasts boneless, skinless
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cloves garlic minced
  • 14.5 oz diced tomatoes canned
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Cream & Cheese
  • 0.5 cup heavy cream
  • 0.75 cup parmesan cheese grated
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 tbsp basil chopped for garnish

Method
 

  1. Dice onion, carrots, and celery. Mince garlic.
  2. Sear chicken breasts in olive oil for 2–3 minutes per side. Transfer to crock pot.
  3. Add vegetables, garlic, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper to crock pot.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  5. Remove chicken and shred. Return to crock pot.
  6. Stir in heavy cream, parmesan, and butter. Cook 15–20 minutes until creamy.
  7. Serve with chopped basil, optional pasta or croutons.

Notes

Add zucchini or spinach for extra nutrition.
