Crock Pot Scalloped Potatoes and Ham

Ingredients
  

Potato & Ham Base
  • 3 lbs russet or Yukon Gold potatoes peeled and sliced
  • 2 cups ham diced
  • 1 onion finely chopped
  • 2 cups cheddar cheese shredded
Cream Sauce
  • 4 tbsp unsalted butter
  • 3 tbsp flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika optional

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Peel and thinly slice potatoes into 1/8-inch slices.
  2. Melt butter in a saucepan, whisk in flour, and cook 1 minute to form a roux.
  3. Slowly whisk in milk and cream until smooth and slightly thickened.
  4. Season sauce with garlic powder, salt, pepper, and paprika.
  5. Layer potatoes, ham, onions, and cheese in greased Crock Pot.
  6. Repeat layers until ingredients are used.
  7. Pour cream sauce evenly over the layered ingredients.
  8. Cook on LOW 6–7 hours or HIGH 3–4 hours until tender.
  9. Garnish with fresh parsley and serve warm.

Notes

For extra creaminess, add more cheese between layers or mix cheddar with mozzarella.
