Ingredients
  

Soup Base
  • 1 lb Italian sausage mild or hot
  • 4 cups chicken broth
  • 3 potatoes diced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.5 tsp crushed red pepper flakes optional
  • 1 cup sun-dried tomatoes drained
Add-In Ingredients
  • 2 cups kale chopped
  • 1 cup heavy cream
  • 0.5 cup Parmesan optional

Method
 

  1. Brown sausage in a skillet and drain excess fat.
  2. Add sausage, potatoes, onion, garlic, broth, sun-dried tomatoes, and seasonings to the slow cooker.
  3. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  4. Stir in kale and heavy cream 15–20 minutes before serving.
  5. Taste, adjust seasoning, and serve warm with Parmesan.

Notes

For a thicker soup, mash a few potatoes before adding the kale and cream.
