- Brown sausage in a skillet and drain excess fat.
- Add sausage, potatoes, onion, garlic, broth, sun-dried tomatoes, and seasonings to the slow cooker.
- Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Stir in kale and heavy cream 15–20 minutes before serving.
- Taste, adjust seasoning, and serve warm with Parmesan.
Notes
For a thicker soup, mash a few potatoes before adding the kale and cream.
