Ingredients
  

Stew Base
  • 2 lbs beef stew meat cut into chunks
  • 3 large potatoes diced
  • 3 carrots sliced
  • 2 stalks celery chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp thyme dried
  • 1 tsp rosemary dried
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup flour for coating beef
Optional Thickener
  • 2 tbsp cornstarch mixed with cold water

Method
 

  1. Toss beef chunks with flour, salt, and pepper.
  2. Optional: Brown the beef in a skillet for extra flavor.
  3. Place beef, potatoes, carrots, celery, onions, and garlic into the slow cooker.
  4. Whisk broth, tomato paste, Worcestershire sauce, thyme, and rosemary; pour into crockpot.
  5. Add bay leaf and cook on LOW for 7–8 hours or HIGH for 4–5 hours.
  6. Optional: Stir in cornstarch slurry to thicken.
  7. Serve warm with parsley.

Notes

For richer flavor, add 1 cup red wine. Add peas during the last 20 minutes of cooking.
