Method
- Toss beef chunks with flour, salt, and pepper.
- Optional: Brown the beef in a skillet for extra flavor.
- Place beef, potatoes, carrots, celery, onions, and garlic into the slow cooker.
- Whisk broth, tomato paste, Worcestershire sauce, thyme, and rosemary; pour into crockpot.
- Add bay leaf and cook on LOW for 7–8 hours or HIGH for 4–5 hours.
- Optional: Stir in cornstarch slurry to thicken.
- Serve warm with parsley.
Notes
For richer flavor, add 1 cup red wine. Add peas during the last 20 minutes of cooking.
