Crockpot Chicken Parmesan

A comforting, cheesy, and flavorful slow cooker version of the Italian classic Chicken Parmesan. Easy to make and perfect for busy weeknights!

Ingredients
  

Chicken Parmesan
  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 egg beaten
  • 0.75 cup breadcrumbs Italian-style preferred
  • 2 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • fresh basil or parsley for garnish

Method
 

  1. Spray the inside of the crockpot with cooking spray or a thin layer of olive oil.
  2. Season chicken with salt, pepper, garlic powder, and Italian seasoning.
  3. Dip each chicken breast in the beaten egg, then coat with breadcrumbs.
  4. Spread 1 cup of marinara sauce on the bottom of the crockpot. Place breaded chicken on top, then pour remaining sauce over the chicken.
  5. Cover and cook on LOW 5–6 hours or HIGH 2½–3 hours, until chicken reaches 165°F.
  6. Sprinkle mozzarella and Parmesan cheese over chicken, cover for 10–15 minutes until melted.
  7. Garnish with fresh basil and serve with pasta or salad.

Notes

For extra crispiness, lightly brown the breaded chicken before placing it in the crockpot.
