Crockpot Creamy Tortellini

A rich, cheesy, and comforting tortellini dish cooked slowly in a creamy garlic sauce with spinach and parmesan.

Ingredients
  

Base
  • 2 packages refrigerated cheese tortellini (9 oz each)
  • 3 cups fresh spinach roughly chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 8 oz cream cheese cubed
  • 0.5 cup parmesan cheese grated
  • 3 cloves garlic minced
  • 1 tsp onion powder
  • 0.5 tsp crushed red pepper flakes optional
  • salt and black pepper to taste

  • Crockpot or slow cooker
  • Mixing bowls
  • Wooden spoon
  • Measuring cups and spoons

Method
 

  1. Add chicken broth, garlic, onion powder, salt, pepper, and red pepper flakes to the crockpot and stir.
  2. Add cream cheese, heavy cream, and parmesan to the slow cooker.
  3. Top with tortellini and spinach (plus any add-ins if desired).
  4. Cover and cook on low for 3–4 hours or high for 1½–2 hours, until tortellini are tender.
  5. Stir before serving to combine melted cheese and spinach evenly.
  6. Serve warm with extra parmesan and fresh basil if desired.

Notes

To prevent overcooking, check the tortellini after 3 hours on low. For a thicker sauce, uncover and simmer for 10 minutes before serving.
