Ingredients

  • 1.5 lbs baby potatoes halved
  • 12 oz smoked sausage sliced
  • 2 cups fresh green beans trimmed
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 2 tbsp butter melted
  • 1 tbsp Cajun seasoning
  • 0.5 tsp smoked paprika
  • salt and pepper to taste
  • 0.5 cup chicken broth optional

Method
 

  1. Add potatoes, sausage, green beans, onions, and garlic to crockpot.
  2. Drizzle with olive oil and melted butter.
  3. Season with Cajun seasoning, paprika, salt, and pepper.
  4. Add chicken broth if desired. Stir lightly to coat all ingredients.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until potatoes are tender.
  6. Garnish with parsley and serve hot.

Notes

For extra flavor, use andouille sausage or add a dash of hot sauce before serving.
