- Add peeled and cubed sweet potatoes to the crockpot along with butter, brown sugar, cinnamon, vanilla, salt, and water.
- Cook on HIGH for 3–4 hours or LOW for 6–7 hours until potatoes are soft.
- Mash sweet potatoes until smooth and creamy.
- Top with mini marshmallows.
- Cook on HIGH for 10–15 minutes until marshmallows melt.
- Serve warm.
Notes
Add chopped pecans for texture. Reduce brown sugar if your sweet potatoes are naturally very sweet.
