Ingredients
  

Salad
  • 4 cups kale chopped
  • 2 cups broccoli florets chopped
  • 1/3 cup carrots shredded
  • 1/4 cup red onion sliced
  • 1/3 cup almonds toasted
  • 1/4 cup parmesan cheese optional
Lemon Dressing
  • 1/4 cup lemon juice fresh
  • 1/3 cup olive oil
  • 1 tsp lemon zest
  • 1 tsp honey
  • 1 clove garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Chop kale and place in a large bowl.
  2. Add broccoli, carrots, and red onion.
  3. Whisk together dressing ingredients.
  4. Pour dressing over salad and massage kale.
  5. Add nuts and toss well.
  6. Top with cheese and serve.
