Ingredients
  

Salad
  • 2 large cucumbers sliced or diced
  • 2 ripe avocados diced
  • 1 small red onion thinly sliced
  • 2 tbsp fresh dill or cilantro chopped
Dressing
  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil extra-virgin
  • salt and pepper to taste

Method
 

  1. Slice or dice the cucumbers and add them to a large mixing bowl.
  2. Add the diced avocado and thinly sliced red onion to the bowl.
  3. Whisk together lemon juice, olive oil, salt, and pepper in a small bowl.
  4. Pour the dressing over the salad ingredients.
  5. Gently toss everything together without mashing the avocado.
  6. Taste and adjust seasoning; serve immediately or chill briefly.

Notes

For added freshness, refrigerate salad for 15 minutes before serving.
