Ingredients
  

Salad Base
  • 1 cup quinoa uncooked, rinsed
  • 2 cups water or vegetable broth
  • 2 English cucumbers diced
  • 0.75 cup feta cheese crumbled
  • 0.25 cup fresh parsley chopped
Dressing
  • 0.25 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 clove garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Rinse quinoa thoroughly under cold water.
  2. Cook quinoa with water or broth according to package directions. Fluff and cool.
  3. Dice cucumbers and chop fresh herbs.
  4. Whisk olive oil, lemon juice, garlic, salt, and pepper to make dressing.
  5. Combine quinoa, cucumbers, and herbs in a large bowl.
  6. Toss with dressing until evenly coated.
  7. Fold in feta cheese gently. Chill before serving.

Notes

For best flavor, chill the salad for at least 15 minutes before serving.
