- Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
- Melt butter in a saucepan over medium heat. Cook onion until softened, then add garlic.
- Whisk flour into the butter mixture and cook for 1 minute.
- Slowly whisk in milk and heavy cream until smooth and slightly thickened.
- Reduce heat and stir in cheddar and mozzarella cheese until melted.
- Season sauce with salt, pepper, and paprika.
- Layer half of the sliced potatoes in the baking dish and cover with half the cheese sauce.
- Repeat with remaining potatoes and sauce.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake another 25–30 minutes until golden and bubbly.
- Rest for 10 minutes, garnish with parsley, and serve warm.
Notes
Freshly shredded cheese melts best and creates the creamiest sauce. Allow the casserole to rest before serving for cleaner slices.
