Ingredients
  

Date Base
  • 18 Medjool dates pitted
  • 1 cup creamy natural peanut butter
  • 1 tsp vanilla extract
Topping
  • 1 cup roasted salted peanuts
  • 2 cups dark chocolate chips
  • 2 tbsp coconut oil
  • 1 pinch flaky sea salt for garnish

Method
 

  1. Line a loaf pan or small baking dish with parchment paper.
  2. Press pitted Medjool dates into the pan to form an even base layer.
  3. Mix peanut butter with vanilla extract until smooth.
  4. Spread the peanut butter mixture evenly over the dates.
  5. Sprinkle roasted peanuts evenly over the peanut butter layer.
  6. Melt dark chocolate chips with coconut oil until smooth and glossy.
  7. Pour melted chocolate over the bars and spread evenly.
  8. Sprinkle flaky sea salt on top and chill until firm.
  9. Slice into bars and serve chilled.

Notes

For cleaner slices, freeze bars for 10 minutes before cutting. Store refrigerated for best texture.
