- Line a loaf pan or small baking dish with parchment paper.
- Press pitted Medjool dates into the pan to form an even base layer.
- Mix peanut butter with vanilla extract until smooth.
- Spread the peanut butter mixture evenly over the dates.
- Sprinkle roasted peanuts evenly over the peanut butter layer.
- Melt dark chocolate chips with coconut oil until smooth and glossy.
- Pour melted chocolate over the bars and spread evenly.
- Sprinkle flaky sea salt on top and chill until firm.
- Slice into bars and serve chilled.
Notes
For cleaner slices, freeze bars for 10 minutes before cutting. Store refrigerated for best texture.
