Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup milk
  • 2 cups blueberries
  • 1 tbsp flour for coating berries
  • 1 tsp lemon zest

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a baking pan.
  2. Whisk together flour, baking powder, and salt.
  3. Cream butter and sugar until fluffy, then add eggs and vanilla.
  4. Alternate adding dry ingredients and milk to form batter.
  5. Fold in flour-coated blueberries gently.
  6. Pour into pan and bake 40–45 minutes.
  7. Cool, dust with powdered sugar, slice, and serve.

Notes

Do not overmix batter. Toss blueberries in flour to prevent sinking. Use fresh or frozen berries.
