Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 0.25 cup brown sugar
Filling
  • 24 oz cream cheese softened
  • 1 cup brown sugar
  • 0.5 cup heavy cream
  • 3 eggs large
  • 2 tsp vanilla extract
Topping
  • 1 cup pecans chopped
  • 0.5 cup caramel sauce

Equipment

Method
 

  1. Preheat oven to 325°F (165°C). Prepare springform pan.
  2. Mix crust ingredients and press into pan. Bake 10 minutes.
  3. Beat cream cheese and sugar until smooth.
  4. Add eggs, cream, and vanilla. Mix gently.
  5. Pour filling over crust and bake until set.
  6. Cool gradually and refrigerate.
  7. Top with pecans and caramel before serving.

Notes

Allow cheesecake to chill overnight for best texture.
