Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 0.75 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 1.5 cups granulated sugar
  • 3 eggs large
  • 2 tsp vanilla extract
  • 1 cup buttermilk
  • 0.5 cup coffee hot
  • 1.5 cups cherries pitted
Chocolate Glaze
  • 1 cup chocolate chips
  • 0.5 cup heavy cream
  • 1 tbsp butter
  • 0.5 tsp vanilla extract

Equipment

  • Mixing bowls
  • Cake pan
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Prepare cake pan.
  2. Mix dry ingredients in a bowl.
  3. Cream butter and sugar, then add eggs and vanilla.
  4. Alternate adding dry ingredients and buttermilk.
  5. Stir in coffee and fold in cherries.
  6. Bake 40–45 minutes until done.
  7. Cool completely on rack.
  8. Prepare glaze and pour over cake.

Notes

Use fresh or frozen cherries; thaw and drain if frozen.
