- Line a 9x13-inch pan with parchment paper and lightly grease.
- Melt butter in a saucepan over medium-low heat. Add marshmallows and stir until melted.
- Stir in vanilla, salt, cherry juice, and chopped cherries.
- Add Rice Krispies and stir quickly until fully coated.
- Press mixture into the prepared pan evenly.
- Melt chocolate chips with coconut oil until smooth, then spread over the top.
- Refrigerate 30–40 minutes until chocolate sets.
- Lift from pan, slice, and serve.
Notes
For an extra festive touch, drizzle white chocolate or sprinkle with crushed freeze-dried cherries before the topping sets.
