Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 2 tbsp sugar
Filling
  • 16 oz cream cheese softened
  • 0.75 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 0.5 cup sour cream
  • 0.25 cup heavy cream
Caramel
  • 1 cup sugar
  • 6 tbsp butter
  • 0.5 cup heavy cream
  • 1 tsp sea salt

Equipment

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix crust ingredients and press into pie dish. Bake 10 minutes and cool.
  3. Beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, then vanilla, sour cream, and cream.
  5. Pour filling into crust and bake 45 minutes.
  6. Cool gradually and refrigerate at least 4 hours.
  7. Make caramel by melting sugar, adding butter and cream, then salt.
  8. Pour caramel over chilled cheesecake and serve.

Notes

Chill overnight for best texture and flavor.
