Ingredients
  

Filling
  • 2 cups cooked leftover ham diced
  • 2 tbsp unsalted butter
  • 1 onion chopped
  • 2 carrots diced
  • 1 cup frozen peas
  • 3 tbsp all-purpose flour
  • 1.5 cups chicken broth
  • 1 cup milk or half-and-half
  • 1 tsp thyme
  • 0.5 tsp black pepper
Crust
  • 1 pie crust refrigerated or homemade

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Melt butter in a skillet and sauté onion and carrots until softened.
  3. Stir in flour and cook briefly, then gradually add broth and milk to form a sauce.
  4. Add ham, peas, thyme, and pepper. Simmer briefly.
  5. Transfer filling to a pie dish and top with crust.
  6. Bake 30–35 minutes until golden and bubbly.
