Ingredients
  

Chocolate Cake
  • 1.75 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp salt
  • 2 eggs large
  • 1 cup milk
  • 0.5 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee or hot water
Cream Filling
  • 1 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1.5 cups marshmallow fluff
  • 1 tsp vanilla extract
  • 2-3 tbsp heavy cream
Chocolate Ganache
  • 1 cup semi-sweet chocolate chips
  • 0.75 cup heavy cream
  • 1 tbsp butter optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans.
  2. Whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Mix until smooth, then stir in hot coffee.
  4. Divide batter between pans and bake 30–35 minutes. Cool completely.
  5. Beat butter and powdered sugar until fluffy, then mix in marshmallow fluff and vanilla.
  6. Heat cream and pour over chocolate chips. Stir until smooth ganache forms.
  7. Layer cake with cream filling, then top with second layer.
  8. Pour ganache over cake and chill before serving.

Notes

Chilling the cake before slicing helps create clean, bakery-style layers.
