Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 0.75 cup cocoa powder
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 1.5 cups sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 1 cup milk
  • 0.5 cup coffee hot
  • 0.5 tsp peppermint extract
Frosting
  • 1 cup butter softened
  • 3 cups powdered sugar
  • 1 tsp peppermint extract
  • 2 tbsp cream
Ganache
  • 1 cup chocolate chips
  • 0.5 cup cream

Equipment

Method
 

  1. Preheat oven to 350°F and prepare cake pans.
  2. Mix dry ingredients together.
  3. Cream butter and sugar, then add eggs and extracts.
  4. Combine wet and dry ingredients, add coffee.
  5. Bake for 30–35 minutes and cool completely.
  6. Prepare frosting and ganache.
  7. Assemble cake with frosting and ganache topping.

Notes

Adjust peppermint extract to taste.
