Ingredients

Ice Cream Base
  • 2 cups Dr Pepper soda
  • 8 oz cream cheese softened
  • 1 cup sweetened condensed milk
  • 2 cups heavy whipping cream cold
  • 1 tsp vanilla extract
  • 2 tbsp brown sugar
  • 1 pinch salt
  • 0.5 cup crushed chocolate sandwich cookies
  • 6 maraschino cherries optional garnish
  • 1 cup whipped cream for serving

Equipment

  • Mixing bowls
  • Saucepan
  • Hand mixer or stand mixer
  • Freezer-safe loaf pan

Method

  1. Pour Dr Pepper into a saucepan and simmer over medium heat for 20–25 minutes until reduced to about 3/4 cup. Cool completely.
  2. Beat softened cream cheese in a mixing bowl until smooth and fluffy.
  3. Add sweetened condensed milk, vanilla extract, brown sugar, salt, and cooled Dr Pepper reduction. Mix until smooth.
  4. In a separate bowl, whip heavy cream until stiff peaks form.
  5. Fold whipped cream gently into the Dr Pepper mixture until fully combined.
  6. Fold in crushed chocolate sandwich cookies if using.
  7. Transfer mixture into a freezer-safe loaf pan or container.
  8. Cover tightly and freeze for at least 6 hours or overnight until firm.
  9. Serve scooped into bowls or cones with whipped cream and cherries.

Notes

For stronger soda flavor, reduce the Dr Pepper slightly longer until syrupy. Let the ice cream soften for 5 minutes before scooping.
