- Pour Dr Pepper into a saucepan and simmer over medium heat for 20–25 minutes until reduced to about 3/4 cup. Cool completely.
- Beat softened cream cheese in a mixing bowl until smooth and fluffy.
- Add sweetened condensed milk, vanilla extract, brown sugar, salt, and cooled Dr Pepper reduction. Mix until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Fold whipped cream gently into the Dr Pepper mixture until fully combined.
- Fold in crushed chocolate sandwich cookies if using.
- Transfer mixture into a freezer-safe loaf pan or container.
- Cover tightly and freeze for at least 6 hours or overnight until firm.
- Serve scooped into bowls or cones with whipped cream and cherries.
Notes
For stronger soda flavor, reduce the Dr Pepper slightly longer until syrupy. Let the ice cream soften for 5 minutes before scooping.
