- Mash bananas lightly in a saucepan, leaving some texture.
- Stir in sugar, lemon juice, vanilla, nutmeg, salt, and cinnamon stick.
- Simmer over medium heat, stirring frequently, for 20–25 minutes.
- Add rum and continue cooking until thick and glossy.
- Remove cinnamon stick and transfer jam to sterilized jars.
