Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs room temperature
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot brewed coffee or hot water
  • 1 1/2 cups heavy cream
  • 12 oz dark chocolate finely chopped
  • 1 tbsp unsalted butter
  • edible gold leaf optional, for garnish

Equipment

  • Mixing bowls
  • Electric mixer
  • Cake pans
  • Wire rack
  • Saucepan

Method

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. Whisk flour, sugar, cocoa, baking powder, baking soda, and salt together in a large bowl.
  3. Add eggs, buttermilk, oil, and vanilla extract. Beat until smooth.
  4. Stir in hot coffee slowly. Batter will be thin.
  5. Divide into pans and bake 30–35 minutes until a toothpick comes out clean.
  6. Cool cakes completely on wire racks.
  7. Heat cream until steaming, pour over chocolate, and let sit 3–4 minutes. Stir until smooth, then add butter.
  8. Layer cakes with ganache, then pour ganache over the top, letting it drip down the sides.
  9. Garnish with edible gold leaf or pistachios.

Notes

For best flavor, use premium dark chocolate and don’t skip the coffee — it deepens the chocolate intensity. Chill the cake before slicing for cleaner cuts.
