Ingredients
  

Mediterranean Chicken
  • 1.5 lb chicken breast boneless, skinless
  • 3 tbsp olive oil
  • 1 lemon juiced and zested
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.75 tsp salt
  • 0.5 tsp black pepper
Bowls
  • 3 cups cooked quinoa
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.5 cup kalamata olives sliced
  • 0.5 cup feta cheese crumbled
  • 0.75 cup tzatziki sauce for serving

Method
 

  1. Whisk olive oil, lemon juice, zest, garlic, oregano, paprika, cumin, salt, and pepper in a bowl.
  2. Coat chicken in marinade and let rest for 5–10 minutes.
  3. Cook chicken in a hot skillet over medium-high heat for 5–7 minutes per side until cooked through.
  4. Rest chicken for 5 minutes, then slice.
  5. Divide quinoa between bowls and top with chicken, vegetables, olives, and feta.
  6. Drizzle with tzatziki and serve immediately.
