Ingredients
  

Marinade
  • 3 dried guajillo chilies stemmed and seeded
  • 2 dried ancho chilies stemmed and seeded
  • 3 cloves garlic
  • 0.5 cup pineapple juice
  • 2 tbsp white vinegar
  • 2 tbsp orange juice
  • 1 tbsp achiote paste
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika
  • 0.5 tsp black pepper
  • 1 tsp salt
  • 2 tbsp vegetable oil

Equipment

  • Blender
  • Mixing bowls
  • Knife
  • Cutting board

Method
 

  1. Soak dried chilies in hot water for 10–15 minutes until softened.
  2. Drain chilies and add to blender with remaining ingredients.
  3. Blend until smooth and well combined.
  4. Taste and adjust seasoning as needed.
  5. Pour over meat and marinate for at least 2 hours or overnight.
  6. Cook marinated meat using preferred method until fully cooked.

Notes

Best when marinated overnight for deeper flavor.
