Ingredients
  

Aioli Base
  • 2 egg yolks room temperature
  • 3-4 cloves garlic finely minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice fresh
  • 1 cup olive oil light or neutral
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper
  • 1-2 tbsp water optional, to thin

Method
 

  1. Whisk egg yolks, garlic, Dijon mustard, and lemon juice until combined.
  2. Slowly drizzle in oil while whisking constantly to form an emulsion.
  3. Continue whisking until thick and creamy.
  4. Season with salt and pepper to taste.
  5. Thin with water if needed and refrigerate before serving.

Notes

Use fresh garlic and add oil slowly for best results.
