Ingredients
  

  • 8 eggs large
  • 6 slices bacon cooked and crumbled
  • 1 cup spinach chopped
  • 1 cup mushrooms diced
  • 0.5 cup shredded cheese cheddar or mozzarella
  • 2 tbsp milk
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. Sauté mushrooms in olive oil until softened, then add spinach and wilt.
  3. Whisk eggs, milk, salt, and pepper in a bowl.
  4. Stir in bacon, vegetables, and cheese.
  5. Divide mixture evenly into muffin cups.
  6. Bake 18–22 minutes until set. Cool slightly before serving.
