Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1 cup cherry tomatoes
  • 1 cup fresh mozzarella sliced
  • 0.5 cup balsamic vinegar
  • 1 tbsp honey optional
  • fresh basil for garnish

Method
 

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet and sear chicken until golden and nearly cooked through.
  3. Remove chicken and sauté garlic and cherry tomatoes.
  4. Add balsamic vinegar and honey, simmering until thickened.
  5. Return chicken to skillet, top with mozzarella, and cover until melted.
  6. Garnish with fresh basil and serve.
