Easy Beef Tortilla Kebabs

Crispy tortilla pinwheels stuffed with seasoned beef and melted cheese, skewered and baked until golden perfection.

Ingredients
  

Beef Filling
  • 1 lb ground beef
  • 6 flour tortillas medium size
  • 1.5 cups shredded cheddar cheese
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 small red bell pepper diced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp tomato paste
  • 2 tbsp fresh parsley chopped

  • Mixing bowls

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet and sauté onion for 3 minutes. Add garlic and bell pepper and cook for 2 more minutes.
  3. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if necessary.
  4. Stir in paprika, chili powder, cumin, salt, pepper, and tomato paste. Cook 2 minutes more.
  5. Spread beef filling onto tortillas and top with shredded cheese.
  6. Roll tortillas tightly into logs and slice into thick pinwheels.
  7. Thread tortilla pinwheels onto skewers and place on prepared baking sheet.
  8. Brush lightly with oil and bake for 12–15 minutes until crispy and golden.
  9. Garnish with parsley and serve warm with dipping sauces.

Notes

You can also cook these tortilla kebabs in the air fryer or on an outdoor grill for extra crispiness and smoky flavor.
