- Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a skillet, cook sausage until browned. Add butter and flour, stir until combined.
- Gradually whisk in milk and cook until thickened. Season with garlic powder, onion powder, salt, and pepper.
- Layer half of biscuit pieces in the dish, pour half of the gravy, sprinkle cheese if using, then repeat layers.
- Whisk eggs, milk, salt, and pepper together, and pour evenly over the top.
- Bake uncovered for 35–40 minutes until golden and set. Let rest 10 minutes before serving.
