Ingredients
  

Burrito Filling
  • 2 cups cooked rice
  • 1 can black beans drained and rinsed
  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp chili powder
  • 1 lime juiced
  • 0.25 cup fresh cilantro chopped
Assembly
  • 4 large flour tortillas
  • 1 cup shredded cheese optional

Method
 

  1. Heat olive oil in a skillet and sauté onion until soft.
  2. Add garlic and cook briefly until fragrant.
  3. Stir in black beans, spices, salt, and pepper.
  4. Add cooked rice and mix until heated through.
  5. Remove from heat and stir in lime juice and cilantro.
  6. Fill warm tortillas with mixture and cheese if using.
  7. Roll into burritos and serve warm.

Notes
