Base
  • 1.5 cups cottage cheese
  • 2 eggs large
  • 1 cup rolled oats
  • 0.5 cup milk
  • 0.25 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 0.5 tsp cinnamon
  • 0.25 tsp salt
  • 1.5 cups blueberries fresh or frozen
  • 1 tbsp lemon zest optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Whisk cottage cheese and eggs until smooth.
  3. Add milk, honey, and vanilla extract. Mix well.
  4. Stir in oats, baking powder, cinnamon, and salt.
  5. Fold in blueberries and lemon zest.
  6. Pour mixture into baking dish and spread evenly.
  7. Bake for 35–40 minutes until set and golden.
  8. Cool slightly before slicing and serving.

Notes

You can substitute blueberries with other fruits or add nuts for extra texture.
