Ingredients
  

  • 1 tbsp olive oil
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 4 cups butternut squash cubed
  • 2 cups cooked chicken shredded
  • 1 can green chiles mild
  • 4 cups chicken broth
  • 0.5 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.5 cup cream or coconut milk optional

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Cook onion until soft, then add garlic and cook briefly.
  3. Add squash, spices, and broth. Simmer until squash is tender.
  4. Partially blend soup until creamy with some texture remaining.
  5. Stir in chicken and green chiles, then simmer until heated through.

Notes

Adjust spice level by choosing mild or medium green chiles.
