Method
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Stir in chili powder and half the enchilada sauce. Simmer for 3–4 minutes.
- Fill tortillas with beef mixture, roll them, and place seam-side down in the skillet or baking dish.
- Pour remaining enchilada sauce over the top. Sprinkle with shredded cheese.
- Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.
Notes
Top with chopped cilantro, sour cream, or sliced jalapeños for extra flavor. Use ground turkey or black beans as substitutes.
