Ingredients
  

Chicken Filling
  • 2 cups cooked chicken shredded
  • 1.5 cups shredded cheese
  • 4 flour tortillas large
  • 0.5 cup bell peppers sliced
  • 0.5 cup onion sliced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 2 tbsp butter

Method
 

  1. Heat olive oil in a skillet and sauté onions and bell peppers until softened.
  2. Add cooked chicken and seasonings, cooking until heated through.
  3. Place cheese and chicken mixture on half of each tortilla, fold closed.
  4. Cook in buttered skillet over medium heat until golden and cheese melts.
  5. Slice into wedges and serve warm.

Notes

Serve with salsa, sour cream, or guacamole for extra flavor.
