Method
- Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
- Season chicken breasts with salt, pepper, and Italian herbs.
- Heat 1 tbsp olive oil in a skillet and sear chicken 2–3 minutes per side.
- Layer half the zucchini in baking dish, place chicken on top, layer remaining zucchini around/over chicken.
- Sprinkle minced garlic, drizzle remaining olive oil, top with mozzarella and Parmesan. Add red pepper flakes if using.
- Bake for 25–30 minutes until chicken is cooked through and cheese is golden.
- Garnish with fresh parsley and serve warm.
