Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 medium zucchini thinly sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs or 1 tbsp fresh
  • to taste salt and black pepper
  • 1/4 tsp red pepper flakes optional
  • fresh parsley chopped for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Season chicken breasts with salt, pepper, and Italian herbs.
  3. Heat 1 tbsp olive oil in a skillet and sear chicken 2–3 minutes per side.
  4. Layer half the zucchini in baking dish, place chicken on top, layer remaining zucchini around/over chicken.
  5. Sprinkle minced garlic, drizzle remaining olive oil, top with mozzarella and Parmesan. Add red pepper flakes if using.
  6. Bake for 25–30 minutes until chicken is cooked through and cheese is golden.
  7. Garnish with fresh parsley and serve warm.
