Method
- Blend strawberries until smooth and strain if desired.
- Heat strawberry puree with sugar and lemon juice until dissolved.
- Bloom gelatin in water, then melt and mix into strawberry mixture.
- Cool mixture to room temperature.
- Whip cream to soft peaks.
- Fold strawberry mixture into whipped cream gently.
- Spoon into cups and chill for 2–3 hours.
Notes
For best results, use fresh ripe strawberries and chill thoroughly before serving.
