Ingredients
  

Strawberry Base
  • 2 cups fresh strawberries hulled
  • 0.5 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
Mousse
  • 1 cup heavy whipping cream cold
  • 1 tbsp gelatin
  • 3 tbsp water cold

Equipment

  • Mixing bowls
  • Saucepan
  • Blender
  • Hand mixer or stand mixer

Method
 

  1. Blend strawberries until smooth and strain if desired.
  2. Heat strawberry puree with sugar and lemon juice until dissolved.
  3. Bloom gelatin in water, then melt and mix into strawberry mixture.
  4. Cool mixture to room temperature.
  5. Whip cream to soft peaks.
  6. Fold strawberry mixture into whipped cream gently.
  7. Spoon into cups and chill for 2–3 hours.

Notes

For best results, use fresh ripe strawberries and chill thoroughly before serving.
