Ingredients
  

Main
  • 3-4 lb corned beef brisket with spice packet
  • 4 cups beef broth low sodium
  • 1 yellow onion cut into wedges
  • 3 cloves garlic smashed
  • 1.5 lb baby potatoes
  • 4 carrots cut into chunks
  • 1 head green cabbage cut into wedges

Equipment

  • Crock Pot or Slow Cooker
  • Cutting board
  • Sharp knife
  • Serving platter

Method
 

  1. Place onions and garlic in slow cooker.
  2. Add brisket and sprinkle spice packet over top.
  3. Pour broth around meat.
  4. Cook on LOW 8-9 hours.
  5. Add potatoes and carrots 2 hours before done.
  6. Add cabbage during last hour.
  7. Rest meat 10-15 minutes before slicing against grain.

Notes

For extra flavor, add a splash of apple cider vinegar or stout beer.
