Cheese Base
  • 16 oz cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary crushed
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Coating
  • 1 cup pecans finely chopped

Method
 

  1. Combine cream cheese and shredded cheddar until smooth.
  2. Mix in garlic, herbs, onion powder, salt, and pepper.
  3. Shape mixture into a log using plastic wrap.
  4. Chill for 1 hour until firm.
  5. Roll chilled log in chopped pecans, pressing gently.
  6. Rewrap and chill 30 minutes before serving.
