Ingredients
  

Cookie Batter
  • 2 ripe bananas mashed
  • 2 cups rolled oats
  • 0.33 cup natural peanut butter
  • 0.25 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.33 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash bananas in a large bowl until mostly smooth.
  3. Stir in peanut butter, honey or maple syrup, and vanilla extract.
  4. Mix in oats, cinnamon, baking powder, and salt until combined.
  5. Fold in chocolate chips.
  6. Scoop dough onto baking sheet and flatten slightly.
  7. Bake for 12–15 minutes until set.
  8. Cool on wire rack before serving.

Notes

Use very ripe bananas for best sweetness and texture.
