Ingredients
  

Batter
  • 1.5 cups cottage cheese
  • 2 eggs large
  • 0.33 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 0.5 cup rolled oats or oat flour
  • 0.25 cup protein powder optional
  • 1 tsp baking powder
  • 0.5 tsp cinnamon
  • 1 pinch salt
  • 2 tbsp milk any type
Mix-ins
  • 1 cup mixed berries fresh or frozen

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Blend cottage cheese, eggs, maple syrup, vanilla, milk, and oats until smooth.
  3. Transfer to a bowl and mix in protein powder, baking powder, cinnamon, and salt.
  4. Fold in berries gently.
  5. Pour batter into baking dish and spread evenly.
  6. Bake 30–35 minutes until set and lightly golden.
  7. Cool for 10 minutes before slicing and serving.

Notes

You can substitute oats with almond flour for a lower-carb version. Frozen berries work well without thawing.
